Aztec chef considers the cuisines of Cuba and Mexico very similar

Cuban and Mexican cuisine are very similar, since the first uses beans and we also use them a lot, in many styles and types, the chef Jorge Woolrich told CubaPLUS.

In an interview given to this publication, regarding his participation in the X Seminar International Gastronomic Excelencias Gourmet, the Aztec chef also meant as another similarity of both cuisines the use of rice in numerous preparations and added that “the emblematic stews of Mexican cuisine use a lot of pork and you (the Cubans) also handle it very well. The difference may be when it comes to seasoning the food, the spices used, but proteins, cereals and legumes are widely shared in both cuisines,” he insisted.

When referring to the origins of both cuisines, this renowned professional considered that we could understand Cuban and Mexican food without Spanish cuisine. ¨It's a fusion very important that originated when the conquest and that until today continues to be valid and keeps moving forward. It continues to transform with all the elements that exist.”

Regarding the relevance of the seminar, he highlighted that events like the one taking place in these moments in Havana are very important, as it makes it possible for “the Cuban brothers, Mexicans, Colombians and other countries adopt other types of techniques and other ingredients to continue evolving in the kitchen”.

Finally, this professional, linked almost since his birth to the culinary world by his grandmothers and his mother - excellent cooks, as he expressed - sent a great congratulations to the young Cuban chefs who have just been awarded in the “Claudio Ferrer” Continental Culinary Cup and he considered that they will surely continue to reap many more awards, evident proof of the quality of his work.
